This is a very simple icing recipe that we absolutely love. Typically we need to make it a bit thicker for drawing fine lines with a small tip in a piping bag but it is a good consistency for outlining and filling cookies. You will probably have to adjust the consistency a bit to get it just the way you want it.

Ingredients

2¼ cups of icing sugar
2 Tbsp. of coconut milk
2 Tbsp. of water
1½ tsp. of vanilla
4½ tsp. of corn syrup

Method

Place all the ingredients in a bowl and mix together with a spoon or spatula. Add any colour you may want once the icing is mixed up.
The icing will need adjusted for your specific use. If you require the Icing to be a bit thicker add a bit of icing sugar and add water if you need the icing to be thinner.
